“Padhir Peni” or Chiroti is one of the famous Karnataka sweet which is mainly prepared on their occassion like wedding and Diwali. This traditional sweet is crispy and yummy where the deep fried layered poori is topped with powdered sugar and flavored cardomom. This Padhir peni is usually served with warm badam milk or rabadi that tastes ultimate while garnishing it with nuts.
Chiroti is one of my favorite childhood snack which my mom try to serve us different snack everyday. You can use to serve it with or without rabadi as per your tastes. Must try recipe!
Padhir Peni recipe is a combination of wheat flour/all purpose flour by binding together to make a crispy snack and finally coated with sugar and rabadi to meet the exact authentic karnataka flavoured snack.
Many where not aware of this traditional chiroti sweet. My mom serve this tasty chiroti with badam milk and we love to eat it a lotttt…

Tips:
- Use Wheat flour if you are in diet or in health concious.
- Rest the dough for 10 – 15 minutes to get the soft texture.
- Use rice flour and ghee mixture to get the crispy layers.
- Keep oil in a medium heat to get golden crispy chiroti layers.
- Prepare rabadi/badam milk to feel the happiness while serving.

Serves : 10 members
Ingredients:
- 200g All Purpose Flour/Maida
- 50g Rava / Semolina
- 2 tsp Rice Flour
- 2 tsp Powdered Sugar
- 3tp Ghee
- 1/2 cup Milk
- Salt to taste
Procedure:
- Take a bowl and add all purpose flour/maida and rava/semolina with a pinch of salt.
- Mix all together by adding milk into it.
- Mix it to combine well and rest it for 10 to 15 mins.
- Meanwhile, we can prepare the batter to spread inside the roti.
- Take an another bowl, add rice flour and ghee to it.
- Mix and combine it well to form a pouring texture which will be easy to apply inside the roti layer.
- Now keep it aside.
- Our batter might be ready at this time. Open the lid and feel the softness.
- Knead it for 5 mins to get the softest dough.
- Now it’s time to make a small balls from the dough.
- Spread into a thin layer by dusting rice flour in the roti maker.
- Prepare enough layers to make this traditional Chiroti sweet.
- Now we can arrange the first layer and apply the rice, ghee batter into the layer.
- Place the second layer on the top of the batter and again apply the rice, ghee batter to make it as a crispy layer.
- Repeat this step until placing 5 layers.
- Once all the process gets over, apply the batter on the top of the layer and start rolling it from one end.
- Roll it over the layers and seal it with the batter prepared.
- Even the roti layer and cut into small pieces.
- Take one piece and roll it in a roti maker by dusting it with rice flour.
- Spread the piece little thicker and keept it aside.
- Place a pan and add oil to fry.
- Fry the roti’s prepared and remove once it achieve its golden colour.
- Remove all the roti’s and keep it aside in a plate.
- Spread the sugar powder on top of the fried roti’s to absorb while it is in warm texture.
- Have it as it is once sugar spread is done.
- To make it special, we can serve it with warm badam milk/rabadi to enhance its texture and to infuse the taste of our Chiroti.
